How to Choose the Right BBQ Smoking Wood – Chips Or Chunks?
There are three things that make for good BBQ: wood, heat and time. The most important part of the puzzle is wood. The wood is used to enhance the flavor of meats. When you have bad wood you have bad flavor. I cannot stress this enough. Do not cut corners on the wood you select and do not just pick up wood from your neighbor’s lawn or apple tree. The wood for BBQ smoking should be selected very carefully. The wood should be a hardwood and free from any resins. Different woods add different flavors to the meat. This is important when smoking different foods from fish, pork, beef, and poultry. All varieties taste different and enhance the food differently. When I am smoking, I personally like to add the wood to the top of my hot charcoals without soaking the wood in water beforehand when using chunks.
