How soon before xmas should you make a christmas cake?
Make it now, and “feed” it every couple of weeks with a tablespoon of Brandy (make little holes over the cake with a skewer or cocktail stick half way down ie. not all the way through first time). DO NOT store it in a fridge – you will ruin the cakes texture and it can take on odours from other food items. Firstly wrap it in a double sheet of clean greaseproof paper then with tin foil and then into an air tight tin.Store the tin in a cool cupboard. Don’t wrap directly with tin foil as the acid in the fruit will breakdown the foil and leave metallic deposits on the cake. By Christmas time the cake will be beautifully moist and ready to marzipan and ice. If you decide not to the cake will last another year as long it is kept air tight and you start feeding it with Brandy again end of October!!!
