You don’t need a dark container if you can put it in a closed pantry. The light will make it go rancid more quickly, but the container doesn’t have to be dark if you put it in a dark place. You shouldn’t put it in the refrigerator. The cold will make water in the air condense, making it go rancid faster. If you’ve got a big container, it will help to transfer it to smaller glass containers as you use it up, since the air will also make it go rancid. You can actually put the ones you intend to use last in the fridge: if they’re full there won’t be much moisture in it to spoil it. And they’ll stay at a constant temperature, which is good for them. Plus, the fridge is certainly dark, and small bottles fit better than big ones. You can store olive oil for a year, or even longer, at room temperature. If you could keep it at 50 degrees it would last even longer, but your refrigerator is colder than that (at least, it had better be) and the harm outweighs the good for open bottles. You can te
