BE VERY CAREFUL WITH THIS ONE. The presence of insects, rancid smell, or the abscence of the eyeballs means it’s been sitting around too long. Remove the guts first, and make sure you don’t spill the bile into the meat. I’d highly recommend squirrel or raccoon if you’re new to eating roadkill.
