Actually, you can view them for free (mostly) Seki (gifu prefecture) is famous for sword and knife making. At the museum, you can view the various stages of making swords as well as some famous swords/apparel too On specific days (I cannot find the calendar in a quick search but it should be there if you take some time to look) various artisans and master carftsmen will provide demonstrations in sword making.
