Human breastmilk shouldn’t be all the different from cow milk or goat milk as far as how to turn it into cheese. According to the website I found they used 5 gallons of goat’s milk to make about 6 lbs of cheese. So, you’d actually need about 0.83 gallons of milk. But round up to 1 whole gallon just to be safe.
