Let’s take chicken pieces, for an example. Again the “rule of thumb” is that each adult guest will have 2 to 3 pieces, children average 1 to 2 pieces. For a garden salad, you will need 7-8 large bags of salad mix. For most other salads, figure on approx. 1/3 to 1/2 pound per person. (5 oz to 8 oz per person) For brisket, you will need 6-8 ounces per person.
