How much fish should you order for a sushi restaurant that seats about 50 people?
The only fish supplier that I know about in the Massachusetts area that handles fish for sushi is Agar Supply, located in Taunton. I’m sure there must be others, however. But let me give you a word of caution. I’m not in the sushi business at all, but I do know that sushi restaurants are super-sensitive to their wholesale costs. Sushi-grade fish is very expensive, and it is extremely perishable. If you have a snows
