Egg yolk powder 100 grams of powder dissolved in 125 grams of water correspond to approx. 225 grams of liquid egg yolk (yolks from approx. 12 eggs). Egg albumen powder 100 grams of powder dissolved in 700 grams of water correspond to 800 grams of fresh egg white (Approx. 25 eggs). In some applications up to 900 grams of water can be used with 100 grams of egg albumen powder.
