How many Upper Deck hockey cards make a complete set and?

From my experience with sports cards, you are going to need to be more specific about your cards. You are going to need to know what year they were printed and if they are part of a special set, for example, Upper Deck Spectrum instead of the regular Upper Deck. The year of the set can be found by looking at the last marked year on the card, the year of the set will be either the year printed, or the year after. The set can be found by searching the front of the card and by looking at the UD symbol in the corner of the card for any extra words other than “Upper Deck” and the player and team name. The extra word/s, if any, are most likely the name of the set. If nothing is found assume that it is the basic UD set. Once you find out this information, the site below has a list of all Upper Deck hockey card sets, even the special sets, with a link to each of their checklists.
