How many species of crickets are there?

It depends on whether you mean all types of crickets (the entire superfamily Grylloidea, including numerous families of insects) or just the family of true crickets (Gryllidae alone), or anything *called* a cricket (like Jerusalem Crickets, Cave Crickets, and Mormon Crickets), and whether you mean the entire world or not. Gryllidae alone is a few thousand species, broadening it to Grylloidea adds several hundred to the list, and all things called crickets would be nearly another 1000 species added to THAT.
