A serving of pork is about 4 ounces, so you’d need about 37.5 pounds of pork to provide one serving per person. If you’re serving it up as a buffet, you should be prepared with some extra, since buffets often encourage people to eat more than they really should, so I’d probably lay in 45-50 pounds. You are going to have other meat items as well and I assume some side dishes. If you were only having the pulled pork I would say one pound a person to be sure. Your wedding sounds like it is going to fun and not stuffy. Are you also having “Green Beer” or is that only for today?
