How many people will be cooking black eyed peas today for new years day?
I cook up a pound of bacon, use a third of a cup of the resulting bacon grease, drain the bacon on paper towels and reserve for later, then add cider vinegar, sugar and black pepper and throw about 4 cans of Black-eyed Peas with their liquor into the pot.Cook it down a little and add the reserved bacon, crumbled or chopped. We use the old Boy Scout recipe for “cornbread”, 1 box of cornbread mix made according to package directions, plus 1 box of yellow cake mix made as directed. Mix them together and bake in a 9 x 13 pan.
