How many famous dishes are on the Xian menu?
It is no doubt that there are many famous dishes in Xi’an. By famous I mean dishes prepared by noted chefs, recorded in history, possessing a reputation and those which have been popular for a long period of time. For example, Fan’s Cured Meat in Pancakes, Shredded Pancakes in Mutton or Beef Broth, the Tong’s Cured Mutton,and so on.Homemade dishes are not included.
