On a previously painted white ceiling, two coats is standard practice. Never, one, even if it looks ok after one. On bare plaster a very thinly watered down coat would be applied first to soak in and take agrip on the plaster, then the two coats. If you buy cheap paint, then you may need to put more coats on.
