How long will sealed cheese keep, if placed in refrigerator?
Factory vacuum-sealed cheese can be held up to six months and manually vacuum-sealed cheese up to three months without molding as long as the seal is intact. Broken seals or split bags allow air to contact the cheese making the growth of mold possible. Higher moisture cheeses like Colby, Lacey, and Baby Swiss may develop a bitter flavor after a few months, however, Cheddar and Swiss cheeses develop a sharper flavor with age. Note: Cheese not vacuum-sealed, can be kept in the refrigerator from one to two weeks if properly wrapped.
