How long & what temp should I bake chicken at?
It comes out dry because you cooked it too long. A lot of people do this thinking they must make sure the chicken is done. You can make sure it is done by using a thermometer and cooking it until it reaches 17degrees. I cook mine at 350 for about 30 minutes but it honestly depends on they type of chicken pieces you have (breasts, thighs, legs, wings and if they have the bone in or boneless.) Start at 350 for 20 minutes in the oven and check the temp and see if you need more time. If you are frying it in a pan on top of the stove it will take less time. I cook mine over med high heat covered and it turns out very nice, again cooking time will vary but start checking after 5-7 min on each side.
I would have your oven callibrated, so that it is working properly. Also, you should follow the recipe setting of your recipe, and look for the doneness rules as states in the recipe.. It is important too, that you continue to check your oven. It all depends on how you are cooking it, and what type of chicken you are cooking. The internal temperature of a chicken breast should be about 170 F. or for whole chickens, thighs, legs, and wings it should be about 180 F. You can purchase a thermometer for about $3.00 at the grocery store. You can also get a oven thermometer if you cannot get someone to callibrate your oven. For Baking it should be about 375 F for breasts and thighs going for about 25-40 minutes and for drumsticks, wings and other meaty parts its about 375 F ro 30-45 minutes In general if you are ROASTING breast halves, drumsticks, and thighs with bone weighing about 2..5 lb to 3 lb then its about 375 F. for about 45-55 minutes. First get a food thermometer, as it will all depend on the size and thickness of the chicken. Cook it to at least 165 degrees. Any longer than that it might get dry. The thermometer can be used in the oven or on the grill. I usually cook it at 300-350 degrees for twenty to thirty minutes in the oven.
