How long should turkey be marinated?
The verb “marinate” means to steep in a marinade. A marinade is a savory blend of oil, an acid (vinegar, lemon juice, wine, etc.), and spices. As the turkey stands in the mixture, the acid and the oil impart the savory flavor of the spices into the meat. The acid also has a tenderizing action. Too much acid in the marinade can have the opposite effect, causing the meat to be stringy and tough. Use a recipe.
