How long does potato salad stay good?
If it has been kept refrigerated and not been allowed to get to room temperature it will be fine if made properly. Mayo is good for quite a while in the jar without problems. What you need to look out for is letting it get warm. When making potato salad it is a good idea to refrigerate the potatoes after boiling them so they don’t warm the mayo. If done this way you can keep the salad for at least a week. The main problem you will have is having it turn runny. The alternative is to throw everything together and keep the mayo separate and mix it just before serving.
