How long can I store sap before I have to boil it?
I assume you are asking about maple sap. The answer depends on the storage temperature. The sap itself is loaded with various spoilage organism and therefore room temp is not a good idea unless you boil it within a few days. If you keep it refrigerated (40F) I would guess a week or two to be safe (from a quality standpoint). Frozen it would last a long time if you have the freezer space. I always tried to use it in a few days and kept it outside till then. Think of sap as very dilute sugar water.
