A. Extra virgin olive oil will not begin it’s “shelf life” until it is exposed to air and natural light. This will not happen until it is bottled. After that it can be stored for a minimum of 12 months ( 1 year ). The length of time it remains fresh and usable depends largely on keeping it out of natural light and above 12 degrees C. In short, keep it indoors, in a cupboard with the top on. Note: if it becomes very cold or even freezes, it may turn cloudy and more yellow in colour but this should not affect it unduly when brought back to normal room temperature. SCOTTRADERS EXTRA VIRGIN OLIVE OIL is bottled 24 hrs prior to collection. Therefore, if you buy it direct from us, you would receive it, normally, within 2 weeks of bottling and so, it will only just have begun it’s “shelf life”.
