How long can a data connection stay active with usage using the SX7T and SX7M (i.e. Can a user expect to use the data connection for Internet connectivity for 8 uninterrupted hours)?

This is network dependent, but according to internal field tests up to 10 days of continuous streaming over 39GB without interruption has been validated. Additionally, the SX7 features “Ping Keep Alive” which detects data connectivity issues and reconnects automatically.
