“Unzipping” your fish allows you to pull every bone out of a fish using a regular fillet knife. The whole skeleton actually pulls out of the fish, leaving two perfect boneless fillets every time. Traditionally, fishermen simply cut through all the bones first and then tried to pull or cut them out, but this often damaged or even destroyed the entire fillet.
