How is the level of digestible carbohydrates established for Dreamfields Pasta?
Each batch of pasta is rigidly monitored and clinically tested. The testing method includes measuring the blood glucose response to the whole food (cooked pasta) by humans (“in vivo”) to establish the pasta’s stated glycemic index. After a person eats the standardized amount of pasta, blood glucose levels are plotted on a graph. The shape and area under a blood glucose response curve is used to determine the glycemic index and reflect the level of digestible carbohydrate.
