Masa is made similarly to the process created by early Aztec women. Kernels of corn are heated in a lime (calcium carbonate) solution. They are then rinsed, drained, ground and dried. The ground corn then passes through a system of rollers and sifters, finally reaching the packaging line. It is here that the corn is combined with other ingredients to make the masa flour ready for packaging.
