Christmas in Ecuador is celebrated with colorful processions of people living in the mountains coming down to their employer’s ranches. Nativity scenes are displayed and gifts of produce are presented to the Baby Jesus. Large festivals are held and gifts are exchanged. Christmas dinner on the ranch would include roasted lamb, were city families feast on turkey.
