How hard is it 2 replace a rack and pinion in the driveway with regular jack stands?

Some cars you can remove and replace the steering rack without having to remove anything else, all you have to do is put the front wheels on ramps, chock the rears and have at it. Others require either removing the front crossmember (and half of the suspension with it) or the engine. In that case, you can still do it with the correct jackstands under the chassis, to support the car and the engine and transmission, and any other heavy parts you need to loosen and move out of the way. If your car is the first case, it should theoretically be possible to remove the old rack, set the new rack to the same length as the old one, fit it up and drive the car around. In the second case, you are going to need some aligning work done.

It is possible, just depends on what kind of car it is, and where they put the steering rack at.
