How good would the PIONEER GM5400T amplifier be for a Sony 12″ Xplod Woofer?

It’s a good match. There are literally hundreds of amps that would work well with that sub. Any 2 channel that bridges to around 400w is going to work fine – that pioneer is obviously one of them. With the amp bridged into 4 ohms it should deliver about exactly rated power to the sub. Sony catches a lot of smack for their car audio gear, but entry level is what they do. I think most of the people running smack are either running some high priced gear so it makes them feel better about their investment, or just idiots repeating what they’ve heard others day. Their stuff is fine for anyone just getting into the hobby.
