Water is absorbed by root hair tissue and is then moved to the xylem. Water is then moved up the plant via transpirational pull because water has the properties of cohesion and adhesion. Basically, plants are losing water out of their leaves if they are doing gas exchange (which they have to do for at least a portion of the day) and because water sticks to itself and to surfaces as water is evaporated out of the leaves more water is pulled up from the roots.
