How does the cost compare to that in supermarkets?
Currently, we charge $1.75/lb of carcass weight plus $.40/lb for cutting and wrapping, for a total of $2.15/lb. Adjusting for losses during cutting and trimming, the cost of wrapped meat will be approximately $2.90-3.00/lb. This will include steaks, roasts, and ground beef. It is difficult to find quality, extra lean ground beef in grocery stores for this price.
