How does the British make their fish and chips?
You beer batter cod or perch fish and make thick square cut potatoes then put into a deep fry basket together. Just as the chips just start go brown on the edges. (approx 5- 8 minutes) The fish will be cooked tender and soft under the batter and chips will be crunchy on the outside and soft in the middle. You take them out of the deep fryer and “tip them” out of the deep fry basket. Onto a piece of butchers or newspaper, to drain off the oil, as you salt the chips. Then rap them in the paper, the paper keeps them warm for up to twenty minutes. Most people like vinegar on the chips (I don’t) and squeeze a lemon wedge on the fish or dip the beer battered fish it into tartar sauce.
