How does puff pastry differ from filo pastry?
there are several differences between the pastries. Puff pastry is basically plain pastry which is rolled out in an oblong shape over which daubs of butter and lard are placed on two thirds of the oblong and then the third with no butter is folded over one third of the buttered part and then folded again to a square like a sandwich roll again to an oblong and repeat the process then you roll to the thickness you desire. the more you fold the better but too much fat. This pastry is what you need to make vol-au-vaunt Filo pastry is much more delicate but not difficult if you know how to make it. My grandmother taught me and the process is difficult to put down in writing I can only show a person how to do it. Nothing like the bought one nor what others talk about, filo is Greek and as a Greek I know how to make it the original way. Proper filo is made with oil and when layered it is brushed with olive oil thus giving it to puff. One needs to know how to make it first.
