Dr. Krishnaveni, Lakdi ka pul PRESERVING GREEN colour of any green vegetable is the chef’s skill and technique. The rule for boiling green vegetables is 1. Never cover vessel while boiling greens. 2. Always put vegetables in boiling water. 3. Cook greens only 80 per cent and cool them down in chilled ice water. This helps to preserve the green colour. You can also store these beans in a deep freezer. While making curry with beans, add all vegetables first and then the beans. This simple technique will keep beans fresh and green, adding more colour to your dishes.
