How does food express and or significantly affect middle eastern culture?

When you talk about food, you talk about roots, tradition and culture. This is even linked with emotions and memories when it comes to your own food, the food you used to eat with your family, the food cooked by your mom. I was not born in Middle East but I spent part of my childhood there. Middle Eastern food (from Turkey to Iran, passing by Lebanon, Kurdistan, Armenia and other countries) is combining elements from Mediterranean food (olive oil, almond, mutton…) with plants and spices from India and Far Asia (cardamom, turmeric etc). + introduced plants from American continent (tomato, chilli etc). It tells a lot about the history of these countries, involved in the trade between West and East.
