There are a number of molds that will grow on bread. I think the most common is called (naturally) the bread mold, Rhizopus. With a magnifying glass you may be able to see that the bulk of the mold is a mass of tiny colorless threads that grow down into the bread. They make enzymes that dissolve and digest the bread into goodies that they can use for growth. If it is Rhizopus, it will also have some upright threads bearing little black balls that are the means of reproduction. Each of these little black balls can break up and discharge hundreds or thousands of spores which are carried away in the air. Any bread that is left out in a damp place provides a happy home for the mold, which can start growing from just one spore.
