your theory is correct in that yes, the benzene ring does render the tail more hydrophobic but if you want to know WHY: the benzene ring is a non-polar addition to the ester and we know ‘like dissolves like’ water is polar – thus benzene does not dissolve in water (actually it has poor solubility)
