How does a restaurateur find out that he or she has gained or lost a star?
The restaurateur finds out on the day the guide is published. Only at the three-star level are the restaurateurs informed personally, just before the guide comes out, so that they are able to prepare for the changes this may bring; in terms of their relationship with the media, for example. This was extended this to the two-star category in the 2004 guide.
