I am not 100% certain that what kind of magnet junkyard uses, but it can be electromagnet. An electromagnet is simply an iron core wrapped around by copper wire. Then current runs through the wire, it becomes a very strong magnet. There are other types, but I think electromagnet is the most common for car scrap heap.
