You’ve made too much rice and you don’t know what to do with it. It sits in your fridge until you’re positive it is no longer safe to eat. Let’s think outside the box! We like to call it Eggy Rice Cereal and it’s a staple at our house. There are no magic amounts in this “recipe.” You’re just going to have to decide amounts by how much rice you have leftover and how many people you’re going to feed. Heat up your skillet and add some butter to coat the bottom and a little way up the sides of the pan. Drop in some eggs and scramble. A good guess for how many eggs you’ll need is about one egg per 1 cup rice. You shouldn’t need salt on these if you’ve already salted the rice when you cooked it on the stove. Sprinkle on the cinnamon while the rice heats up and the eggs finish cooking. You could add other spices like cloves or nutmeg now, too. When the eggs are dry and the rice is hot go ahead and serve up breakfast. Sprinkle on some brown sugar, pour on a little milk and….Mmmmmmmm.
