Use some of this shredded zucchini instead of potatoes in a potato latke recipe for a new twist on an old standard. Try slicing your zucchini and frying it with butter and onions as a side dish. Slice your zucchini, coat it with egg and then cornmeal; then fry in oil. Cut some zucchini in half lengthwise, brush with oil or oil and spices. Grill for a tasty treat.
