How Do You Use Leftovers To Make A Frittata Instead Of Soup?
If you’re like me, each week you end up with small containers of leftover vegetables and meats in your refrigerator after a few days’ worth of meals. Instead of tossing everything into a pot for “Roundup Soup,” you can make a delicious frittata for a quick and easy weekend breakfast. Just combine your leftovers with eggs and cheese. Here’s how: Assemble ingredients: Remove containers of leftovers from fridge, along with eggs and cheese of choice. (See tips below for combining ingredients so that you have a tasteful frittata instead of a “Roundup Frittata.”) Dice veggies; chop meats and potatoes into bite-size pieces. Grate or shred cheese, if needed. Use about 1 cup for semi-soft cheeses like cheddar, mozzarella, or Monterey jack; use about 1/4 to 1/2 cup for hard cheeses like Parmesan or Asiago. Prepare egg mixture: Break 5-6 eggs in a medium bowl. Add 1-2 tbsp. milk or water. Add salt and pepper to taste. Add other seasonings according to the theme of your frittata (see tips below).
