Propane and natural gas grills cook food at a fairly high temperature, using direct heat. On the other hand, smokers cook slowly, using indirect heat and smoke. Some gas grills have a wood-chip drawer or separate smoke box and burner for adding smoke, but most don’t. Try these techniques on any grill to regulate the cooking temperature and give your food a true smoked flavor. Soak about ΒΌ pound of wood chips or chunks in water for 20 minutes. Use any hardwood or fruitwood; hickory, mesquite and apple are longtime favorites. Fire up your gas grill. Place the damp wood in an aluminum or foil pan and set the pan on one side of the grill racks. Turn off the center burners once the grill has heated up and the wood chips have started smoking.
