How Do You Store Leftover Lemon Meringue Pie?
Lemon meringue pie is an old-fashioned favorite. A lemon meringue pie consists of a pie crust, a layer of lemon filling and a top layer of meringue. Meringue is simply egg whites and sugar that are whipped and then spread over the lemon filling. Many people encounter problems when storing lemon meringue pie; as the meringue sit over time, often it begins to “weep”” water, creating drops of moisture on the surface. Properly storing a leftover lemon meringue pie will help minimize weeping. Keep leftover lemon meringue pie at room temperature. Do not refrigerate lemon meringue pie because this will cause the meringue to weep. Place the lemon meringue pie on a countertop or other flat surface. Invert the large bowl over the top of the lemon meringue pie. This will minimize drafts and protect it while you store it. Use the lemon meringue pie leftovers within one or two days.
