How Do You Store Fresh Pressed Olive Oil?
Fresh pressed olive oil is tasty and a healthy addition to your cooking, but if you do not store it properly, it can quickly turn rancid. The result is a foul taste and smell. Rancid olive oil should be discarded, but having to do so is a waste of money, since olive oil is more expensive than other types of vegetable oils. You need to know some tips to keep your olive oil tasting as fresh as it did the day it came off the press. Transfer your olive oil into an opaque container (not an opaque one) with tight-fitting lid or cork. This will keep light out of your oil. Sunlight can lead to the breakdown of the oil and speed the process at which it will turn rancid. Tightly cap or cork your olive-oil bottle. This keeps oxygen out of your oil. Oxygen is another enemy of oil. Put the olive-oil container in the back of your pantry, in a cool, dark corner. Store the olive oil in the refrigerator if you live in a warm climate. Allow the oil to return to room temperature before using.
