How Do You Stir-Fry Vegetable, Chinese Style?
Do you want to learn the “authentic” way that Chinese stir fry vegetables? Take a look and start making your own “Chinese” stir-fry in “Chinese” style. Wash your vegetable, cut them into your favorite size (usually about 1-2 inches long). Drain water as much as possible. Do NOT wash your garlic. Use the side of your knife to press down the garlic, peel the skin. Chop or slice or mince the garlic into smaller pieces. Turn on the exhaust fan to high. Heat up 1-2 tablespoons of oil in the fry pan in high heat for about 1 min. Add the garlic into the hot oil, and you should see the bubbles immediately. Stir/mix the garlic with spatula a couple of times. When the garlic turns slightly brown, put the vegetable into the fry pan. Stir/mix the vegetable and oil a couple of times. Cover the fry pan with the lid, and wait for 1-2 minutes. Add a pinch of salt, and stir with spatula a couple of times. Cover the fry pan with lid, and turn off the heat. Let it simmer for about 2 min and serve.
