One thing you can do–certainly better than just throwing the brown sugar out–is to soften up that hard block of sugar in your microwave. The microwave will only temporarily soften the brown sugar and it will form back into a hard block once it cools down again. Remove 1 cup of the brown sugar and place it into a microwave-safe container. Place the brown sugar in the microwave. Cover the sugar with a damp paper towel. Heat the sugar on high for 30 seconds. Stir the brown sugar. Continue heating it in the microwave for 10-second intervals until the sugar becomes soft enough to use. Do not overheat the brown sugar because it will melt.
