Transfer the peppers immediately into a sealable baggie or a plastic container with a tight lid. Set peppers aside and allow them to cool for 15 to 20 minutes. The steam gets in between the skin and the flesh of the pepper making this process easy. Remove the peppers one at a time. Secure the baggie each time to keep the other peppers warm. Use your fingers to peel the skins off the peppers. Keep the meat of the pepper and discard the skins.
