I settle a few times every time I grind for an expresso. Every time that you settle it, every tap you are going to be able to fit another gram of espresso grinds down into the basket. So–and you want to do that the same way and the same number of times every time you brew expresso. So now that I have settled it, I can fit a little bit more coffee in the basket. The next thing I am going to do is level off the coffee in the top. And what you will see me doing is not only levelling it off to get a nice, flat even surface in the top of the basket but also kind of push around the coffee in such a way that I evenly distribute it throughout the basket. I am just going to push it back off into the dosing chamber and we can dump that later. Clean up the porta filter.
