How Do You Serve Classic Blackened Redfish?
Make this simple but elegant dish in less than 20 minutes. The key is using very high heat to pan fry thin fillets of Redfish. This recipe serves 4. Preheat your oven to 180 degrees and have 4 plates handy. Dry the fillets as much as possible then brush them with some of the oil and sprinkle the seasoning mix evenly on both sides. Set them aside until they are at room temperature. Pour half of the remaining oil into the skillet and put the burner on high. When the oil starts to really smoke, place 2 of the fillets in the skillet and cook for approximately 2 minutes on each side until brown. Place the fillets on plates, pour about a tablespoon of the melted butter over each fillet and put the plates in the oven. Repeat the process with the other 2 fillets. Leave the plates in the oven for about ten minutes to insure the fish is cooked in the middle. Put whatever else you want to on the plate and serve piping hot.
