How Do You Serve Apple Rice Salad?
When you serve a lovely meal, remember that the cooking is only part of the preparation, and that presentation is all-important. An apple rice salad may taste delicious as is, but also should complement the dish with an elegant presentation. Chill the apple rice salad in the refrigerator for at least 30 minutes. Press the chilled salad firmly into the cup or bowl, flattening the salad evenly with the open edge of the cup. Place several arugula, spinach or dark leafy greens on a serving plate. Remove the salad and invert it carefully onto the leaves, rounded side up. Sprinkle a bit of freshly ground pepper over the top of the salad. Poke a sprig of arugula or other greens into the top of the mound of salad for garnish. Add more color by sprinkling a few dried cranberries or blueberries over the top of the salad. Serve immediately.
